Château-Chalon is an Appellation d'Origine Contrôlée for wines made in the Jura wine region of France, around the village of Château-Chalon. Only white wines from the Savagnin grape made in the vin jaune ("yellow wine") style can be made using this appellation. It is bottled in clavelin,the traditional bottle of a peculiar shape with a capacity of 62 cl.
Made strictly in accordance with tradition from the Savagnin grape, the wine is kept in the barrel for 6 years under it's protective yeast layer. It fully expresses the character and subtlety of this grand "terroir". Those tasting this wine are often surprised by it's long lasting finish, a taste somewhat similar to Fino sherry, as well as the richness of it's aroma. It should be kept for 10 years before it really reaches it's peak.
Serving:
Vin jaune should not be chilled but served just cool. Decanting can be beneficial and gives the wine time to breathe.
Food pairing:
The classic dish for vin jaune is poulet de Bresse à la crème aux morilles. Alternatively, anything with mushrooms dominant works well, the wine is brilliant with risottos, curries and strong hard cheese, especially Comté.
